The luxurious Resort and Spa has become a very well known destination for local guests and guests from abroad. The Resort offers award winning restaurants Tarpon Bay, Tanglewood and 72,000sq. ft. of indoor and outdoor function space. The resort added a waterpark and enjoys yearlong business with both group and even more transient business.
Aspiring chefs have the chance to work alongside the experienced team and rotate around the award-winning kitchens which offer excellent local and international cuisine.
Tanglewood: Florida inspired comfort food with an international twist. Innovative dishes with exotic flavors and local ingredients, from fresh seafood to artisan brick oven pizzas, paired with signature cocktails and wines by the glass. Signature dishes are famous jumbo lump crab cakes and seared Florida grouper paired with a Floridian Martini. 
Tarpon Bay: Florida inspired seafood restaurant where the chef infuses the freshest seafood with innovative combinations of herbs and spices and also offers private event space.
Corkscrew: This poolside cocktail bar has a lunch menu which features burgers, wraps, hot and cold sandwiches, garden fresh salads, kid’s menu, fruit and soft drinks.

Andreas Singer

Executive Chef

Chef Andreas Singer started his culinary career as an apprentice in his native Austria.  Upon continuing his education he worked in several different Resorts and positions in Austria, Switzerland and Long Island, New York. He began his Hyatt career in 1994 as a Sous Chef on Grand Cayman Islands. During his time there he was promoted to Executive Sous Chef, and he has never looked back, working around 4 different locations of the Hyatt Regency family. Currently, Chef Singer is the Executive Chef at Hyatt Regency Coconut Point located in Bonita Springs, FL. 


Bill Zimmer

Executive Sous Chef

Chef Bill completed his culinary education at Johnson and Wales University and is active in a number of community organizations and events locally.  Since he joined in 2019, Chef Bill's responsibilities span the five restaurants and food outlets on property from quick service to fine dining.  He is involved in all aspects of the culinary operations from personnel to menu writing.

Prior to joining the Coconut Point team, Bill was one of three executive Sous Chefs at The Club at Pelican Bay in Naples, Florida. He also served as the Executive Chef of The Edgewater Beach Hotel.  Chef Bill was born and raised in the suburbs of Philadelphia, and was transferred to Fort Lauderdale, Florida to work at the famous Pier 66 as a sous chef at the California Café.
